Flour production in 2006 up in
nine states, down in six
WASHINGTON - Flour production in
nine states in 2006 increased over 2005,
while six states registered decreases,
according to preliminary data from the
Census Bureau of the U.S. Department of
Commerce. State production for the year
is based on quarterly output reports.
The four top producing states - Kansas, California and Hawaii, Minnesota
and Ohio - all recorded increases, while
the next three - Pennsylvania, New
York state and Missouri - were down.
Kansas output, which was down sharply
in 2005, posted a small gain in 2006.
The North American Millers' Association provides funding to the Census
Bureau in support of the compilations of
these quarterly milling statistics.
U.S. flour production in 2006 totaled
397,360,000 cwts, up 0.6% from 394,973,000
in 2005. Mills in all the states for which the
Census Bureau does not issue separate reports - to avoid disclosure of individual
company data - produced a combined
total of 113,170,000 cwts in 2006, or 28.5%
of the national total. This was down 1.8%
from 115,213,000 cwts in 2005, which accounted for 29.2% of the aggregate.
Kansas in 2006 once again ranked
first among states in flour production, at
34,882,000 cwts, up 0.3% from 34,767,000
in 2005. Kansas mills produced 36,629,000
cwts in 2004.
In 2006, Kansas accounted for 8.8% of
national flour production, the same as in
2005 but down from 9.3% in 2004, 8.9% in
2003 and unchanged from 8.8% in 2002.
The 2006, 2005 and 2002 shares for Kansas
flour output were the smallest in recent
history and contrast with the peak share
of national output of 13% in 1977 when
Kansas mills produced 35,769,000 cwts.
California and Hawaii combined
ranked second among states in flour
production. Output for the combined
two states was 31,755,000 cwts, up 2.6%
from 30,938,000 in 2005. It also was down
from 32,396,000 in 2004 and 33,489,000 in
2003, the record. California and Hawaii
in 2006 accounted for 8% of the nation's
flour production, up from 7.8% in 2005
but down from 8.2% in 2004.
Minnesota again ranked third, turning out 27,073,000 cwts in 2006, a gain of
8% from 25,063,000 in 2005. Minnesota's
share of national output in 2006 was
6.8%, up from 6.3% in 2005.
Ohio mills in 2006 ranked fourth,
turning out 24,073,000 cwts, up 6% from
22.7 million in 2005. Mills in Ohio turned
out 6.1% of the national total in 2006, up
from 5.7% in 2005.

nois, 5.9%; Texas, 4%; Utah, 3.6%; North
Carolina, 2.8%; California and Hawaii,
2.6%; and Kansas, 0.3%.
The sharpest output decrease was in
Iowa, down 11%, followed by Pennsylvania, 3.5%; New York state, 3.2%; Missouri, 1.1%; Oregon and Washington,
0.7%; and North Dakota 0.4%. MBN

Semolina output in 2006 up 1.6% to four-year high
WASHINGTON - Production of straight
semolina and durum flour by U.S. mills
in 2006 increased to a four-year high of
31,334,000 cwts, up 1.6% from 30,838,000 in
2005, according to the Census Bureau of the
U.S. Department of Commerce. This was the
largest semolina production since 32,411,000
cwts in 2002. Output in 2006 also was up
16.2% from the recent low of 26,959,000 in
2004. Semolina output in 2003 was 29,691,000.
Even with the gain, production in 2006 was
down 1,596,000, or 4.8%, from the record of
32,930,000 cwts in 2001.
Statistics on durum semolina issued since
2000 are not strictly comparable with earlier
years because of a change in the data. Beginning in 2000, the Census Bureau said: "Prior
to the first quarter 2000, these data included
only establishments classified in Flour Milling, NAICS 311211. These data now include
pasta manufacturers if they have and operate
a flour mill on site and are producing straight
semolina flour or blended semolina durum
flour from flour they have milled."
The North American Millers' Association
provides funding to the Census Bureau in
support of the compilation of these statistics.

At 31,344,000 cwts, semolina and durum
flour output in 2006 was the eighth largest in a series dating back to 1966. The record semolina output in 2001, of 32,930,000
cwts, was followed by 1994 at 32,631,000,
1996 at 32,623,000, 1993 at 32,488,000, 2002
at 32,411,000, 1992 at 31,905,000, 2000 at
31,749,000 and 1995 at 30,964,000.
Data are not available to determine how
much of the semolina output and durum
grind fluctuations experienced in the 1990s
reflected structural changes in the industry as
durum milling expanded at semolina plants.
Many in the industry believe the true peak in
production was possibly in the late 1990s.
In the first year of the semolina series, 1966,
production was 12,441,000 cwts, which is the low.
The 2006 increase of 496,000 cwts came
on the heels of a surge of 3,879,000 in 2005.
This, in turn, followed three successive annual reductions. In 2004 output was down
2,732,000 cwts, 2003 was down 2,720,000
cwts and 2002 was down 519,000. Output in
2001 was up 1,181,000 cwts. Comparing old
and new numbers for 2000 shows a gain of
5,663,000. Prior to the change in 2000 and
