Dairy Products
Price changes in dry dairy products
were mixed last week.
Nonfat dry milk (N.D.M.) prices were
up 2@3c a lb in the Central and East regions and steady with a weak tone in the
West. Production of N.D.M. in the Central and East decreased due to reduced
milk availability to dryers as the result
of extreme heat in the Southeast and increased demand for fluid milk as schools
reopened. Production in the West held
strong. Supplies of high-heat N.D.M.
were tight, but demand was only fair.
Dry whey prices declined 3c a lb as supplies remained heavy in all regions. Since
peaking at 77@81c a lb on April 20, dry
whey prices have declined more than 30%,
but remained about 70% above year-ago
levels. Increased demand was noted at recent lower prices. Production declined.
Prices of lactose, 34% whey protein
concentrate (W.P.C.) and dry buttermilk
held steady, although the top end of
price ranges declined for W.P.C. and buttermilk. Production decreased seasonally in most regions, but inventories were
heavy, and demand was only light to
fair. Some increased production of 80%
W.P.C. in place of 34% W.P.C. was noted.
Cheese prices increased as production
declined due to reduced milk supplies.
Butter prices declined but at a slower
pace. More cream should be available as
schools reopen and utilize lower-fat milk.

July milk production was 14.5 billion
lbs, up nearly 4% from a year ago, the
U.S. Department of Agriculture said in
its latest Milk Production report. MBN
Egg Products
Egg product prices were firm to mostly
higher last week. Graded eggs and breaking stock prices shot higher as 100-plus
degree temperatures in the Southeast
reduced egg sizes as well as numbers.
Breaking stock prices were 3@5c a dozen
higher, although some processors paid
premiums to secure supplies.
Dry egg yolks were up 2c a lb and
blends up 5c, while dried whole eggs and
whites were unchanged. Supplies of dry
products were tight, and some processors
limited sales to current customers only.
Liquid egg products were up 2c a lb
and frozen items 2@3 higher. Some processors were concerned that if the egg
shortage lasts long, liquid and frozen
product needs would be satisfied first and
supplies to dryers could run short. MBN
Cocoa
Cash cocoa powder prices held steady
last week. Trading was routine. Cocoa futures hit 6½-month lows at midweek before
turning higher at the week's end. The harvest of Nigeria's new cocoa bean main crop
began last week while 2007-08 harvest in
Ivory Coast was a few weeks away. MBN
