Dairy Products
Prices of dry dairy products, butter and
cheese were weak to lower last week. Cheddar barrels were the exception, with prices
moving sharply higher in trading at the
Chicago Mercantile Exchange after a recordlarge daily drop a week earlier. Contracting
of dry milk products for 2008 remained
light as prices continued to decline.
High-heat nonfat dry milk (N.D.M.)
sank 4@12c a lb last week amid light
demand. Prices of low- and mediumheat N.D.M. were steady to 5c a lb lower
amid slow holiday trading and light demand. Production was strong because of
increased milk supplies during holiday
school closings. Users remained hesitant
to buy in a declining market.
Buttermilk powder prices were 5c a
lb lower amid strong production and
growing inventories. Demand was light
during the holidays. Prices of 34% whey
protein concentrate eased 1c as the result
of strong production, slow holiday demand and some import competition.
Dry whey and lactose prices were unchanged, but the market remained weak
as production was heavy and demand was
limited. Producer stocks were mixed.
Cheese production remained strong due
to extra milk supplies during the holidays.
Demand was limited as buyers assessed
holiday sales before placing new orders.
Butter prices declined on lighter demand and strong production. MBN
Egg Products
Egg and egg product prices were
mostly unchanged in quiet holiday trading last week. Most prices remained at or
near record levels and often two to three
times above year-ago values.

Dried egg yolk prices gained 5c a lb,
but other dried product prices were unchanged. Trading slowed dramatically
during the holiday week as expected,
but processors noted strong orders beginning late New Year's week. Processors reduced drying time during the holidays, but some ran more than expected.
Frozen egg product prices were mixed,
with whites up 1c a lb, salted yolks down
2c and whole eggs and sugared yolks
unchanged. Liquid egg product prices
also were unchanged.
Breaking egg supplies were available,
but some still commanded a 2c premium
to quoted values. Demand was reduced

Cocoa
Cash cocoa powder prices were unchanged in extremely slow holiday activity. New York futures prices traded
lower at midweek then rallied late in
the week on support from a strike by
workers who register cocoa for export in
top-producing Ivory Coast. Cocoa bean
arrivals at Ivory Coast ports were 30%
ahead of a year ago through the first 12
weeks of the main crop harvest. MBN
