Conditioner keeps tortillas
from sticking

Kas., has developed Tortilla
Suave, a conditioner that offers
the benefits of extended shelf
life and the ability to combat
sticking situations associated
with the production of tortillas.
Recommended use levels are 1%
to 2% based on flour. The conditioner may be added on top of
existing tortilla formulas to reduce sticking, improve softness
and increase rollability.
Tortilla Suave contains no hydrogenated fats and may be used
as part of a formula labeled as 0
grams trans fat.

Tate & Lyle adds to soluble
corn fiber line
Tate & Lyle, P.L.C., London, has introduced Promitor Soluble Corn Fiber 85, which is 85% fiber and has
been shown to replace
polyols. The company
already offers Promitor
Soluble Corn Fiber 70,
which is 70% fiber.
Promitor Soluble
Corn Fiber 85, a prebiotic, is 1.2 calories
per gram and may be
labeled as soluble corn
fiber or maltodextrin.
It is suitable for applications with no sugar
added.
Tate & Lyle included
Promitor Soluble Corn
Fiber 85 in pizza, where
it replaced sugar in the
crust, and beverage prototypes at I.F.T. 10, the
Institute of Food Technologists' annual meeting and food
exposition in July in Chicago.
A four-cheese pesto pizza qualified as a good source of
fiber because it included 3 grams of fiber per 170-gram
serving. A Mediterranean pizza qualified as an excellent
source of fiber because it included 7 grams of dietary fiber per 206-gram serving. A juice flavored with blueberry
and acerola qualified as an excellent source of fiber because it contained 5 grams of fiber per 8-oz serving.

Enriched soybean oil increases
omega-3 fatty acid index
Soybean oil enriched with stearidonic acid (SDA) increased the omega-3 fatty acid index in a study appearing
on-line Aug. 25 in The American Journal of Clinical Nutrition and involving researchers from the Monsanto Co., St.
Louis, and the University of South Dakota in Sioux Falls.
The study identified the omega-3 fatty acid index as the
sum of two omega-3 fatty acids - eicosapentaenoic acid
(EPA) and docosahexaenoic acid (DHA) - as a percentage
of total fatty acids.
In the placebo-controlled, double-blind multicenter
study, 252 overweight subjects randomly were assigned to
one of three treatments for 12 weeks. A control group daily
took 1 gram of encapsulated soybean oil plus 14.7 grams
of liquid soybean oil. A second group daily took 1 gram of
encapsulated EPA plus 14.7 grams of liquid soybean oil. A
third group daily took 1 gram of encapsulated soybean oil
plus 14.7 grams of soybean oil enriched with SDA. After 12
weeks, treatment values for the omega-3 fatty acid index
were 4.15 plus or minus 0.12% for the control group, 4.84
plus or minus 0.13% for the EPA group and 4.69 plus or
minus 0.15% for the SDA group.
The omega-3 fatty acids EPA and DHA are found in fatty
fish. The body also converts the omega-3 fatty acids SDA
and plant-based alphalinolenic acid (ALA) into EPA and
DHA, but SDA is converted more efficiently than ALA.
Monsanto and The Solae Co., St. Louis, have collaborated to add SDA to soybean oil. The Solae Co. offers
Soymega, a soybean oil enriched with SDA that has been
shown to work in baked foods, soups, sauces, beverages,
snack bars, dressings and yogurts.

Rice ingredients provide fiber
but no gluten
CJ America, Inc., Chicago, now offers
RiPro 80 and Riber 50, which are specialty
ingredients made from rice. The ingredients
add fiber to finished food products while
also allowing the products to be glutenfree, natural and vegan.
RiPro N80 is extracted and made from rice
bran. It has good solubility and has been
shown to work in such applications as nutrition and protein bars, protein shake mixes
and baby formulas. RiPro E80 is made from rice endosperm.
It is highly digestible and has been shown to work in such applications as cereal, granola and baked bars; breakfast cereals
and snacks; confectionery; and meat products.
Riber 50 is concentrated rice bran fiber that is more than
50% dietary fiber. It has been shown to enforce texture in
cereals, snacks and baked foods and to work as a bulking
agent in bakery and meat products.
