Premium and specialty products in the spotlight
I
n recent years, the largest commercial bread bakers in the
United States have made moves to strengthen their position
in what could be characterized as the mass market for bread
- traditional white pan bread and the most commonplace variety bread selections. In 2015, the focus has been quite different.
Over the past year, Grupo Bimbo
S.A.B. de C.V., Flowers Foods, Inc.
and others have announced initiatives aimed at boosting their positions in the premium and specialty
market.
This focus toward higher end
contrasts with major steps both
Bimbo and Flowers took in recent years, acquiring the largest
mass-market bakers in the United
States. In 2011, Grupo Bimbo
acquired the North American
fresh bakery business of the Sara
Lee Corp., catapulting Bimbo into
the position of the largest baking
company in the United States. In
2014, Bimbo acquired Canada
Bread Company, Ltd., a leading baker and marketer of sliced
bread, buns, bagels, English muffins and tortillas in Canada, frozen bread in North America, and

specialty bakery goods in the United Kingdom.
Flowers in 2013 made its largest acquisition ever in the
commercial bread market with the purchase of most of the
bread baking assets of Hostess Brands, Inc.
Bimbo's acquisition gave Bimbo Bakeries USA a relatively new
but highly successful brand in the
bread market - Sara Lee, which
today is the second largest U.S.
bread brand as measured by unit
sales. With its acquisition from
Hostess, Flowers added numerous
brands to its portfolio, including
the wounded but still iconic Wonder brand.
While Flowers has had success in its efforts to revive the
Wonder bread brand, the overall market for fresh bread was
down 0.98% in unit sales in the
52 weeks ended Aug. 9, 2015,
according to data from Information Resources, Inc. The weakness was tilted toward the lower
end of the market as defined
by price per unit. For example,
private label bread sales were
down 1.8% in unit sales over
the past year, a rate of decline
