Consumers choose dairy items for taste, protein and affordability
eventy-eight percent of Americans believe dairy is an essential
part of a healthy and balanced diet, according to consumer research
conducted in November 2023 by the International Food
Information Council, Washington. Consumers `rank` taste as the main factor
for purchasing cheese (72%), yogurt (61%) and milk (50%). Other
key purchase motivators include being a good source of protein, bone
health, dental health, muscle health and affordability.
When it comes to the frequency of consuming dairy products, cheese
reigns supreme, with 90% of Americans saying they eat cheese at least
once a week. Cheese is followed by butter (85%), milk (75%) and
yogurt (60%), according to the IFIC survey.
Within dairy, total milk is the top seller, but natural cheese is nipping
at milk's heels and shows both dollar and volume growth, according to
sales data from Circana, a Chicago-based market research firm. And

while milk is the top seller, it also is the only dairy category to experience
a net decrease in reported consumption over the past decade.
" Dairy is well shopped, " said Jonna Parker, principal of fresh foods at Circana.
Retail sales of whole milk, the most popular variety, rose in 2023, according
to Circana, and so did total lactose-free retail milk sales, which
increased 6.7% to 239.2 million gallons. In response, many dairies are
now making lactose-free whole milk available in family-size gallon jugs.
Cheese consumption in the United States set an all-time high in 2022,
reaching nearly 42 lbs per person, a half-a-pound per-person increase
from the previous year, according to the Economic Research Service (ERS)
of the US Department of Agriculture. For comparison, the average American
consumed 32.2 lbs of cheese in 2000 and 21.9 lbs in 1980.
Basic dairy department cheeses, such as American, cheddar and
mozzarella, in shred, chunk and sliced format, remain the leaders in
