circular logic of 'Can we bring
the cost down by building something closer to the processor or
distributor?' Unfortunately, if
you don't have the volume, the
economics don't work."
Regarding shipping product
to a third-party irradiator, Hunter admits it does complicate logistics and inventory handling.
"But those are things that can be
worked out. They are certainly
not deal breakers," he adds.
There still are what Hunter
calls 'early adopters' - "executives
who really care about food safety
and realize it's the best technique.
They want to be able to sleep at
night and not worry about their
companies in terms of lawsuits
and recalls and that's pretty much
where it is right now."
A consumer-driven
technology
Food irradiation in the US will
continue to be demand-driven,
Hunter predicts. "Anybody who
wants to be successful in the
food irradiation business is going to have to irradiate a variety
of foods including spices, oysters [another emerging market],
fruits and vegetables, as well as
meat and poultry," he adds. "So,
there are opportunities out there;
it's certainly a fledgling industry,
even to this day when you look at
the potential volume out there."

chair," Hunter says. "It's a small
