Ras El Hanout
This complex, aromatic blend of
spices with its origins in North Africa
is one of the flavors tipped for
success. Ras El Hanout has a strong,
spicy kick and a floral fragrance. It is
ideal for use in Moroccan and North
African-style starters, sauces and
ready-to-eat meals. Product activity
featuring Ras El Hanout has been
low so far. Between 2005 and 2010
only 31 new products launched
featured the ingredient.
Caribbean spices: on the rise
An analysis of new US meat
products also shows Caribbean and
other spicy style flavors to be on the
rise. Adding a spicy note to new
chicken launches is particularly
trendy right now. Caribbean flavors
are another trend to watch. In 2010
Innova Market Insights tracked 143
new products worldwide featuring
the word ‘Caribbean’. Caribbean
flavors convey a relaxed and
chilled-out lifestyle. Busy consumers
can identify with this. Innovative
new launches have also been noted
in the ready-to-eat meals sector in
Scandinavian markets and in the
Netherlands. It is, however, the UK
with its traditional ties to the
Caribbean region which features
the highest levels of new product
activity using this style.
Indian, the leading fl avor
It will come as no surprise that more
traditionally popular ethnic flavors
such as Indian are still in the lead.
What is seen now, however, is that
these flavors are becoming more
region-specific. New authentic
regional dish and flavor specialties
are being added all the time to the
palette of Indian flavors. Tikka,
Jalfrezi, Masala and Korma variants
are becoming mainstream flavors
for a variety of snack, soup and
ready-to-eat meal products. Newer
emerging Indian flavors include
Bhuna, Pasanda, Mulligatawny
and Karahi. In the US, we see
chicken breast marinated, roasted
and simmered in a robust, creamy
sauce served with basmati rice.
Also introduced are spicy, roasted
chicken wings marinated in an
authentic Tandoori sauce and
culinary chicken Tikka Masala,
a frozen skillet meal for two,
featuring grilled seasoned
chicken with rice and tomato
in a rich Tikka Masala sauce.
The next right flavor to go with your
protein in a new winning ready-to-eat
meal product could come from an
as yet undiscovered regional
specialty. Hot and spicy combinations
and extreme flavors are what
consumers are now asking for.
