Such a short-term success for two
meat-industry near-rookies may be hard to
understand, but the imagination and vision of
the Brothers Trippett doesn't end there.
"We're looking ahead to coming up
with our own version of boxed beef,"
Mike explains, hardly able to contain his
enthusiasm. "We absolutely will not be
just another boxed-beef company. We'll be
processing only certified local animals that
will be largely Prime with a much higher
percentage of yield. It will not be the least
expensive, but it will be much more closer
trimmed and those buying it will be very
pleased with the yield they get."
The brothers are appreciative of the staff
they adopted when they bought Hoffman's
and have relied heavily on them to train
new employees. There is a deep sense of
pride among employees, who are thrilled

with seeing products they make sold at
the Baltimore Suns games, or having their
Fordham Bier Dogs partnered with Rams
Head and Fordham Brewing Company.
"We think our employees have recognized
that the customer wants things to return to
the way they were many years ago," Mike
notes. "In a sense, I think all we've done was to
understand and recognize all those hot buttons
that customers had about where their meat
was coming from, that it had to be free of all
the things they didn't understand, that it had to
taste like something special and that they could
trust those who were preparing it for them.
There never was anything complicated about
that and we just tried to build that philosophy
into our products and marketing program."
One will understand more by looking at
their new vision in packaging stock-in-trade
items like hot dogs and sausages. While
shrink-wrapped, they come in a well-decorated
box that tells the story of the company and its
philosophy.
