In recent decades, industry insiders have urged consumers
to play an increasing role in maintaining food safety at
home. In addition to ensuring they keep their meat and
poultry products stored at a safe temperature, they must
also ensure they are cooked at a safe internal temperature.

have dedicated ample resources
toward foodborne-pathogen
detection and their reduction
in meat and poultry products
over the years, but many
consumers aren't doing their
part at home, according to a
study published in the Journal
of Food Protection earlier
this year. Almost 66 percent
of consumers own a food
thermometer, yet less than 10
percent who own one use it, the
study found.
In any given year, more
than 1 million people in the
US contract Salmonella,
while more than 400 deaths
per year have been linked to
the pathogen, Atlanta-based
Centers for Disease Control and
Prevention (CDC) estimates.
In addition, Campylobacter
sickens more than 1.3 million
individuals each year.
As a result, the US Dept.
of Agriculture recommends
consumers use a thermometer
to check for doneness of meat
and poultry, said Katherine
Kosa, food and nutrition policy
researcher at RTI International
and lead author of the study.
"Using a food thermometer is
the only reliable way to ensure
food is cooked to a safe internal
temperature to destroy any
harmful bacteria that may
present."
Meanwhile, researchers
intend to use survey findings
to develop consumer-focused,
science-based education
materials. During the past
15 years, some food-safety
insiders have urged meat
and poultry processors to
add thermometers to their
product packaging in hopes of
spurring consumers into using
thermometers more often
when cooking meat.
