products. This technology accurately indicates
(within + or - 2°F) when poultry, meat and
fish items have reached their optimum level of
doneness when the indicator "pops up".
"Our customers [processors] are noticing use
of these disposable cooking indicators is an easy
way to gauge doneness in meats," says F. Edward
(Ed) Gustafson II, president of Volk Enterprises.
"They want to ensure consumers - their
customers - are preparing meats safely. There
are also quality, consistency and convenience
components. It's very easy to overcook meats
when you try to cook them to a minimum safe
temperature. These disposable cooking indicators
are very accurate, simple for the consumer
to use and understand, provide a great level
of confidence, safety and convenience while
preparing meats - plus it adds the level of value

THE FUTURE
It appears the US meat and poultry industry
is moving more toward front-to-back supply
chain management, and time-and-temperature
management is an important component of
that movement, 3M's Wadie says.
"It will be interesting to see if the meat
and poultry industry eventually follows the
lead of the pharma industry, which is now
tracking drugs and their time-and-temperature
conditions from the moment it is first developed
in the lab to the point where it goes to a
warehouse and eventually is dispensed by a
doctor or pharmacist," he adds. "I think we'll
also see more real-time monitoring that involves
mobile apps that can tell you what is happening
to a product even while it's in transit, as well as
coding and scanning that work through boxes
to make the process more time-efficient."
