Un programa efectivo de control de plagas inicia con
el entendimiento de plagas potenciales, sus hábitos
alimenticios, dónde y cómo viven y varios métodos para
controlarlas y eliminarlas. Las plagas más comunes en
las instalaciones de procesamiento de alimentos son
cucarachas, insectos -incluyendo moscas, hormigas y
escarabajos- roedores y aves.

CUCARACHAS
Las plagas más comunes que se hallan en las
instalaciones de procesamiento de alimentos, se ha
demostrado que las cucarachas transmiten enfermedades
incluyendo bacterias como Salmonella, Vibrio cholera,
Staphylococcus aureus y otros.
Una buena manera de detectar cucarachas es entrar a
una gran área de producción, encender la luz y mirar a las
cucarachas que escapan. También pueden encontrarse al
inspeccionar dentro de las cajas de uniones eléctricas y
tableros de control o mirando atrás de objetos y desagües
de los pisos.
Prevención - El primer paso para prevenir
cucarachas es eliminar los sitios en donde puedan vivir
incluyendo cajas de cartón. Es importante sellar y llenar
las rajaduras y grietas en toda la planta tanto en las áreas
de producción como en las de no producción. Sellar las
aberturas alrededor de conductores y tuberías que pasan a
través de paredes y techos.
Control - El control químico de cucarachas requiere
insecticidas aprobados por el EPA que son generalmente
formulados como aerosoles atomizados o polvos.

INSECTOS VOLADORES
Los insectos voladores más comunes son las moscas
domésticas y las moscas de la fruta. Se ha estimado
que una sola mosca puede acarrear hasta 3.6 millones
de bacterias. El movimiento de las moscas desde los
alimentos insalubres hacia productos alimenticios
frescos, equipo de producción y otras superficies provee
interminables oportunidades para transmitir bacterias
causantes de enfermedades.
Prevención - El método más efectivo para prevenir
las moscas es retirar y eliminar los sitios de reproducción.
Esto significa, principalmente, la disponibilidad de basura.
La basura debe ubicarse lejos de las puertas y retirarse
frecuentemente. Debe prevenirse la entrada de moscas al
complejo de procesamiento de alimentos.

ROEDORES

AVES
