While the initial sales took place at
Oraschewsky's restaurant, the partners also set
up sales shops in their garages and at a festival
in Virginia Beach, Virginia. Two years ago,
the company and the products made it onto
QVC. And before you know it, Oraschewsky
and Kramer decided to take their company
and products into both wholesale and retail
outlets. Bacon jam is sold at more than 1,200
foodservice and retail locations, as well as
through private labeling.

The product and business got started at a
Philadelphia Eagles tailgate party, which
featured jalapeño pepper sandwiches with
spreadable bacon jam. "We're foodies, home
brewers and especially bacon lovers, so this
product grew out of our desire to explore
unique and fun recipes. Everyone who tried
The Bacon Jams wanted more and repeatedly
said to us, 'You need to be selling this.' So
after some time planning and organizing, our
business was born," Oraschewsky says.
The product consists of bacon, caramelized
onions, brown sugar and apple cider vinegar.
"It's savory and sweet, a true American
condiment," Oraschewsky laughs. So why
bacon? "Well, bacon comes from the best
part of the animal - the belly is where the
flavor is. Then it's smoked, there's the texture
component to it. In our bacon jam, it's salty and
sweet. It's like a chocolate-covered pretzel; it
has that wonderful mix of contrasting flavors."
The Bacon Jams has expanded beyond
the original basic bacon flavor. The Sampler,
includes the original Bacon Spread, as well as
Red Chile and Garlic, and Black Pepper, which
sells for $39.99. In addition to the bacon jams,
the website offers a bacon barbecue sauce, a
Himalayan bacon salt blend, a maple bacon
sugar rub and bacon caramel popcorn - and an
Emergency Bacon Kit that contains all four.
Although the bacon jams are shelf stable,
they don't contain preservatives so they need
to be refrigerated after opening. Oraschewsky
says all of his products are made with real
gourmet bacon. Oraschewsky says the
best way to eat bacon jam is "spread it on
everything you want to taste like bacon."
