High prices and supply chain issues are
changing the way people buy meat
The 2022 Power of Meat Report indicates 58%
of consumers are making changes to their
meat purchases because of high prices and
items being out of stock. Buying only what they
need is a key strategy for 39% of consumers
surveyed. Due to supply chain challenges and
fewer promotions, substitutions that saved
money in the past may not save money now.
For this reason, researchers say that " buying
only what I need " is a more significant measure
than it has been in previous years.
Roerink believes the meat industry needs to
better align portions with actual households.
Traditionally the food industry has been
focused on the family of four. However, the
distribution of U.S. households has changed.
One and two person households now represent
63.1% of all households. " The two largest
generations are boomers and millennials, most
of whom live on their own, " adds Roerink.
" Many people can do nothing with those bigger
packages, and it can make people angry when
they have to toss food out. "
Growth in value-added meats
Volumetric portioning has made it easier
for processors to meet demand for premarinated,
pre-cut or pre-seasoned meat
products such as kabobs, fajita mix, seasoned
pork chops and steaks. In 2016, 37% of meat
shoppers purchased value-added meat and
poultry sometimes or frequently. In 2022,
this increased to 67% - an increase of 30
percentage points. " You don't see that kind of
movement very often, " Roerink says.
Value-added meat sales are up 23.3% vs. 2019
(10.6% in pounds), outpacing conventional
fresh meats which rose 19.7% (3.7% in
pounds). Value-added meats accounted for
9.4% of all fresh meat sales in 2021.
According to the Power of Meat Report,
value-added products are a favorite among
Gen Z and Millennials in urban areas with a
