Understanding each cuisine's culture was also key
"As a chef, authenticity is very important to me," noted Chef Tom
Griffiths, CMC, vice-president of R&D Innovation at Freshly. His session
explored Pacific Rim fusion cuisine. "I study the roots of a culture to better
understand the gastronomy that the cuisine evolves into. As chefs, it's
important to understand consumers' needs and interests." Chef Griffiths
is passionate about sustainability and was excited to help others explore
lesser-used seafood choices, like alewives and bluefish.

Attendees also took advantage of innovation lectures. These sessions, led by
RCA partners McCain and the American Egg Board, focused on innovative food
development and eggs as a functional ingredient. And because no trip to Napa would
be complete without it, Rombauer Vineyards presented a thorough sensory experience
on varying regional wine profiles.
After an immersive 48 hours filled with good food, great ideas and plenty of
networking, attendees left Napa feeling refreshed, inspired and ready to infuse new
ideas into their work.
