While a staple in many

consumers told Technomic's
researchers that it's important
for operators to specify the type
of beef they use. There has also
been some movement toward
fresh, not frozen burgers:
major QSR chain McDonald's
Corp. made news in 2018
when it announced it was
switching to fresh, madeto-order burgers in place of
frozen burgers for its Quarter
Pounders. And premium
burgers are in demand, as
consumers have indicated they
are willing to pay more for more
gourmet varieties.

What does it look like, to meet
consumers' current appetites?
Bernd Mense, senior director
of food technology at Reiser,
notes that burgers currently
appealing to consumers may
seem slightly familiar for those
with a longer memory. "Our

buy fresh ground meat, take it
in their hand, form it and fry it
or grill it on a barbecue. That
