Individual stripper feet align to the contour of the product,
holding it in position for a consistent needle pattern with
uniform injection. Each foot triggers an individual valve so that
brine flows only when the foot is in contact with the product.

with continuously decreasing
diameters to maintain exact
pump pressure and levels.
Over-pumping will result in a
"mushy taste".
Filtration: Filtration is a
critical step to injection, if not
the most crucial one. Poor
filtration can lead to clogged
needles, which are extremely
problematic. "As you start
plugging up needles, pump
pressures will fluctuate and that
is when inconsistencies happen.
Yields will lack consistency, and
the product will lack uniformity,"
Steinman says.
One way to prevent clogged
needles is through a better
brine filtration system,
preferably an automatic system.
Manual systems depend on the
operator to stop the system
and clean the filters. Reiser
offers a range of automatic

filtration solutions, including the
Fomaco CBF 500 and Fomaco
FM80 filters.
The continuous belt filter CBF
500 is a saddle tank designed
to collect, filter, condition, and
re-use the return brine from the
Fomaco injector. It has a mesh
filter on the belt and a sensor
that is activated to automatically
empty the belt. "I tell customers
that you don't need to have the
CBF 500 for every product, but
when you are running multiple
shifts in a continuous operation,
you have peace of mind knowing
that you are automatically
filtering your brine with no
operator intervention. This helps
with production output and
consistency," says Steinman.
The Fomaco FM80 is a
self-cleaning filter located
on the positive side of the
pump. "After the return brine
gets pre-filtered in the saddle

tank, it goes through another
filtration system - the Fomaco
FM80 self-cleaning filter - to
eliminate particulates," says
Steinman, adding that the
FM80 prevents clogging,
eliminates the need for pump
pressure adjustment, minimizes
brine flow issues and pressure
drops, and automatically cleans
out its filters.
Sanitation: At the end of
the process, proper sanitation
of the equipment and proper
maintenance must be done
correctly to avoid other issues.
Steinman recommends using
a hygienically designed injector,
one that allows fast, effective
and thorough cleaning with less
labor. Machines with automatic
wash programs and easilyremoved needles, needle heads,
and conveyor belts enable
speedier sanitation.
As processors improve the
respective steps involved in their
injection process to achieve
better yield and quality, they
can also take advantage of new
injection technologies. Reiser,
for its part, offers specialized
Fomaco injectors designed to
work with certain applications
and throughputs, such as bacon
and seafood, among other
products. Double head, triple
head and even quadro head
injectors are available.
The Fomaco M3 injectors are
servo driven, allowing users to
control the stroke height, needle
head speed, and belt speed. It
