FLAVORS THAT
SIZZLE
Hot, international, mashups and more are trending in the snack aisles.

Snack makers are branching out into a number of
exciting new flavor trends. They are fulfilling consumers'
quest for nostalgia, pursuing interesting
flavor combinations and exploring new international
alternatives.
The most popular trend is hotter than ever: Super
hot, heat paired with lime, chili peppers and bold
flavors were all mentioned by snack manufacturers.
A stroll past any snack display at the grocery store
confirms the truth: Consumers like their spice.
" The big direction in snacks right now is toward
hotter and spicier flavors, " said Tom Vierhile, vice
president strategic insights, North America, Innova
Market Insights. " Rolled tortilla chips - like Takis -
are also a growing trend along with puffed snacks
like popped water lily seeds. What seems to be
changing is that spicy flavors are getting more specific
by naming specific varietal peppers responsible
for the heat and spice. We're seeing more launches
featuring 'Hatch chili' as a flavor, for instance.
Ghost pepper is another one to watch out for. "
Several snack makers are watching this trend and
expanding their offerings to meet consumer demand.
" Heat is certainly a trend that's spread across a
variety of categories, " said Matt Colford, executive
director of marketing and strategic selling at Old
Dutch Foods, Roseville, Minn. " We've expanded
that characteristic into several of our product segments
including potato chips, tortilla chips, extruded
categories and our newly launched indulgent
pretzel category with strong out-of-the-gate results.
So across all major segments, heat seems to be
emerging. We recently launched our Rings O' Fire
corn snacks as an extension of our Sour Cream
and Onion Ring, and that's been very popular. "
THE RIGHT MIX
Snack makers are focused not just on strong seasonings
but also on pairing them with the right
textures.
" Bold flavors - not just hot and spicy - but
more complex, nuanced flavors, " is a trend, said
Valerie Oswalt, president of Camden, NJ-based
Campbell Snacks. " Snacking is multi-sensorial -
texture and flavor have to work together, and it has
to be visually appealing. The design of our Snyder's
of Hanover Twisted Pretzel Sticks is a great example
of this. "
