GLOBAL WARMING
Regional flavors and spicy ingredients push the category forward.

It's both good news and bad news for the meat
snacks market. According to Circana, dollar
sales for the Dried Meat Snacks category increased
1.3% to nearly $2.6 billion for the 52
weeks ending Jan. 28, while Jerky dropped
1.4% during that same time period to $1.2 billion.
Perennial powerhouses Jack Link's and
Slim Jim once again dominate both categories.
Traditional beef and pork sticks and strips remain
popular as do newer products such as beef bites
and bars. And although more traditional flavors,
including teriyaki, peppered and spicy, smoked/
mesquite and hickory, remain the staples of the
category, younger consumers are pushing for more
unconventional mashups that incorporate emerging
flavors from other regions. Global flavors and
ingredients, including Asian and Mexican varieties
- turmeric, Korean BBQ, as well as churro, dulce
de leche and guava, for example - are still trending
upward.
The Hofmann Sausage Co., for example,
dropped its first pork jerky
product under the Hofmann
brand, a Korean Style BBQ
Flavor Smoked Pork Jerky, while
Windward Jerky Co. developed
Alaka'l Island Teriyaki Beef
Jerky made using a secret family
Hawaiian marinade recipe passed
down through generations.
Spicy is one trend that seems to
have plenty of staying power. Jack Link's teamed
up with Doritos to create a Spicy Sweet Chili variety
of beef jerky - in addition to its Fritos and Flamin'
Hot mashup - while Old Wisconsin's Hot & Spicy
Sausage Bites and Old Trapper's Hot & Spicy Beef
Jerky remain category favorites. In addition, Archer
recently introduced a spicy variety of its Ancestral
Beef Blend Meat Sticks, and Chomps offers both
jalapeño and habanero varieties of its grass-fed
meat sticks.
