grown in the U.S. (i.e. U.S. Hard White Winter and U.S. Soft White), Canada (i.e. Canadian Prairie Spring White, Canadian Western Soft White and Canadian Western Hard White) and in France (i.e. Bread and Biscuit making wheat). Wheat is categorized white or red mainly because of its bran color. Internally, there is also an effect on the endosperm color as it becomes more creamy and bright. White wheat is preferred in most of the Asian, Middle Eastern and East African countries due to its end-product perception. MAJOR WHEAT PRODUCERS/EXPORTERS Some of the countries outside of North America that have produced and exported wheat during the last decade are discussed below. • Australian wheat is considered to be among the best due to low moisture, low ash and high test weight. Australia is the only non-North American country that produces two types of real hard wheat for pan breads. These are APH (Australian Prime Hard) and AH (Australian Hard) with high protein levels. These two types of excellent quality white Australian wheat widely grow in most of eastern Australia. Two mediumprotein types of wheat are APW (Australian Premium White) and ASW (Australian Standard White). These four types of wheat are used for pan breads, buns, flat breads and noodles.

Australia grows soft wheat in its western region which is used for biscuit production. Australia also produces durum wheat for pasta. Most of Australian wheat is exported. Exporting terminals all around Australia are well equipped with sophisticated grain handling systems. • Wheat is grown in many countries in Asia, but only four of them are mentioned here. Pakistani, Iranian and Indian wheat is white in color, low in moisture with medium strength. The wheat grown in these countries is considered good for blending. However, because farming techniques in these countries are not advanced, the yield per acre is less and the dockage is relatively high. Most of this wheat is milled for flat bread production (i.e. tandoori, chapati and puri). On the other hand, Kazakstan red wheat has a range of medium to hard strength with higher moisture levels. • Most European wheat is red in color except Turkish and French. Turkish wheat is good blending wheat for the production of different types of breads. Russian, German, Swedish and other wheat from the former CIS countries is mainly red in color with medium strength, higher moisture, low ash and reasonable falling number. French wheat is mainly used in France or is exported to the former French colonies where French-style breads are more popular. Endosperm color of French wheat is yellowish. • Wheat is grown in several South American countries including Argentina, Brazil, Paraguay, and Uruguay. Argentina is the largest and most consistent exporter of medium strength red wheat for blending purposes. All South American wheat is red in color. MILLING SYSTEM COMPARISONS Some of the differences between the U.S. and other milling systems include: • All mills outside the U.S. use the metric system in their calculation. • In the U.S., the break rolls have different types of corrugations than other systems. • The nomenclature is different. While elsewhere all smooth roll passages are called reduction rolls, which are named as C1, C2, and C3, etc, in the U.S., the smooth rolls are divided into various sections as sizing rolls, middling rolls, tail end system, etc. • The break rolls have flutes or corrugations which are denoted as a percentage in the European system, while in the U.S. they are denoted as inches. There are some minute design differences in the individual machines produced by various machine manufacturers in the U.S. and Europe.
