着水次数以及润麦时间的长短
主要由以下因素决定:
小麦品种
小麦颗粒硬度
小麦原始水分
小麦入磨水分
清理设备主要包括:
清理筛及其吸风分离器
去石机
打麦机及其吸风分离器
上述设备极佳的清理效果确保
了高品质面粉的生产。
生产精制面粉的面粉厂应该保
证面粉中不含斑点,这就要
求彻底清除黑色种籽。此时需
要使用滚筒精选机,在有些现
代化的面粉厂中,甚至会使用
索特克斯色选机。这同样适用
于全麦粉的生产,除了小粒种

对于原始水分高于13%的半硬
和软质小麦,只需一次着水,
润麦时间因小麦硬度不同而介
于12-24小时之间。
对于水分含量在11-13%间的D
N S 、C W R S 或A u s t r
a lPrime Hard等硬质小麦,
最好进行二次着水,具体时间
应根据面粉水分要求而定,
建议润麦时间在24-36小时之
间。
小麦籽粒硬度对调质时间的影

响如图1所示。
润麦后,小麦再次经过清理
筛、去石机、打麦机等设备的
清理,被输送至B1入磨仓。图
2显示的清理流程采用了索特
克斯色选机和预润麦仓。预润
麦仓可确保高度的卫生条件和
润麦仓料流的均匀。
着水机的重要性
使用自动着水控制仪MYFC(图
3)可精确测量小麦的水分含
量,根据着水后所要求的小麦
含水量计算出加水量。
