Ingredients:
4 tortillas
¼ cup peanut butter
2 bananas
¼ cup herbed cream cheese spread
2 slices Virginia ham

Ingredients:
1 ¼ lbs. plum tomatoes
(about 5 large)
9-inch pastry shell, pre-baked
½ cup green onions, thinly sliced
1 tablespoon fresh basil, minced
¼ teaspoon of salt
¼ teaspoon of pepper
½ cup reduced-fat mayonnaise
½ cup reduced-fat cheddar cheese,
shredded

Directions:
For sweet roll-ups: Place tortilla on cutting board
and spread with peanut butter. Peel banana and lay
in on the edge of the tortilla. Roll banana in tortilla.
For savory roll-ups: Repeat using ham and cheese
spread. Slice into rounds and arrange on a plate
with cut edge facing up.
Together this makes a great one-stop picnic lunch
perfect for a spring outing with your family.
2 bacon strips, cooked and crumbled
2 tablespoons Parmesan cheese,
shredded
Directions:
Cut tomatoes into 1/2-inch slices. Place half of
the tomatoes in pastry shell. Top with onions
and remaining tomatoes. Sprinkle with basil,
salt and pepper. Combine mayonnaise and
cheddar cheese; spread over tomatoes leaving
1/2 inch around the edge. Sprinkle with
bacon and Parmesan cheese. Bake at 350
degrees for 45-55 minutes until golden brown.
Editor's note: Can be used with regular
mayonnaise and regular cheddar cheese.
Ingredients:
16-24 oz. frozen peas, thawed and drained
½ cup cheddar cheese, shredded
½ cup mozzarella cheese, shredded
6 strips bacon, cooked and chopped
1 cup mayonnaise
½ cup red onion, diced
salt to taste
coarse black pepper to taste
Directions:
In large bowl combine all ingredients.
Mix well and chill four hours or overnight.
Other great stir-ins: shredded carrots,
diced ham instead of bacon, Ranch dressing.
