The French word for
sunflower is 'tournesol,' or
literally, 'turn with the sun.'
Scientists call the plant's
ability to face the sun from
morning till night
'heliatropic.' This dynamic
quality of flower heads to
turn with, or track, the sun
early in their development
seems further evidence of
their energy and vitality.
Sunflower seeds are easy for children to
plant and their rapid growth is rewarding
to watch. Little hands can easily sow the
seeds 1 inch deep and 6 inches apart in full
sun. Keep seeds moist until they germinate,
usually in about 14 days, then thin to 18
inches apart and mulch to retain moisture.
The plant's height can contribute a fun
element to a secret garden for kids. The
fast-growing stalks can quickly become
supports for a fort or castle enclosure or
can form the sides of a garden maze. If you
are planting sunflowers as a border to the
vegetable garden, situate the giants on the
north side so their shadows will not
prevent their neighbors from getting sun.
If you plan to harvest seed heads, you
may want to cover them with paper bags,
burlap or even pantyhose to thwart the
squirrels. Harvest them when the seeds
start to turn brown or when the backs of
the seed heads turn yellow. Cut off the seed
heads mid- to late-morning after the dew
has dried, with about a foot of stem
attached. Hang them upside down in a
well-ventilated place to dry fully.
Entire heads can be crafted into fall
wreaths or seeds can be removed and
stored in airtight glass jars to retain flavor.
Seeds are delicious toasted or substituted
for nuts in salads or in baking. They are
rich in vitamins B and E, iron and
potassium, and contain about 25 percent
protein. From start to finish, sunflowers
provide a jolt of welcome energy.
