Stuffed Tomato Snack

Ingredients:
24-48 cherry tomatoes
8-oz. cream cheese, softened
2 tablespoons mayonnaise
1 medium cucumber, peeled
and diced
3 green onion stalks, diced
2 teaspoons minced dill
fresh dill for garnish
Directions:
Cut thin slice off top of each tomato. Scoop out pulp. Invert tomatoes on
paper towel to drain. In medium bowl, combine cream cheese and mayonnaise
until smooth. Stir in cucumber, green onion and minced dill. Spoon
mixture into tomatoes. Top with fresh dill. Refrigerate until ready to serve.

Fresh Tomato Pie

Ingredients:
9-inch pie crust, unbaked
1 ½ cups mozzarella,
shredded
3-4 medium tomatoes,
thinly sliced
⅓ cup Vidalia onion,
thinly sliced
Directions:
Preheat oven to 400 degrees. Bake crust 10-12 minutes or until golden.
Cool on wire rack. Reduce oven to 350 degrees. Sprinkle half the cheese
on bottom of cooled crust. Top with tomato slices and arrange onion
slices evenly over tomatoes. Combine salad dressing, remaining cheese
and seasonings in small bowl and mix well. Spoon over vegetables.
Bake 40-45 minutes, until bubbly and golden. Serves 8.

½ teaspoon dried basil leaves
½ teaspoon salt

SUMMER SALSA

Ingredients:
4 tomatoes, chopped
½ bell pepper, chopped
1 small onion, chopped
¼ cup cilantro chopped
1 jalapeno pepper, seeds
removed and minced
Directions:
Chop tomatoes, bell pepper, cilantro and onion. Place into a large bowl.
Remove seeds and mince jalapeno pepper. Mince garlic. Add minced
items to mixture along with the lime juice. Mix well and add salt
and sugar to taste. For smooth salsa, use a blender to pulse to a finer
consistency. Serve with tortillas, tacos and as a topping on many dishes.

The greatest quantity of tomatoes grown in Virginia is on the Eastern
Shore and Northern Neck. Did you know tomatoes are filled with
vitamins A and C, as well as calcium and potassium, which make them
good for your heart? Tomatoes come in a variety of colors, including
red, yellow, pink, purple and green. A tomato is considered a vegetable
in the culinary world. But, botanically, it is a fruit because it contains
the seed of the plant.
