Layered Beef
Casserole

Ingredients:
1 tablespoon butter
1 tablespoon onion, finely
chopped
2 tablespoons red and/or green
pepper, finely chopped
1 lb. ground beef
½ teaspoon salt
½ teaspoon black pepper
2 cans (8-oz. each) tomato sauce
4 oz. cream cheese
1 cup small curd cottage cheese
¼ cup sour cream
6 oz. fettuccine (a macaroni
product), cooked and drained
1 cup frozen corn, defrosted
¼ cup Parmesan cheese,
finely grated
¼ cup shredded mozzarella cheese
Directions:
Heat oven to 325 degrees. In a large skillet, melt butter. Add onion,
red or green pepper and ground beef; brown until beef is done and
onion and pepper is tender. Add salt, pepper and tomato sauce.
Simmer 10 minutes or until thoroughly heated. In medium bowl, beat
cream cheese, cottage cheese and sour cream. Add cooked pasta and
blend well. Spoon into a 9 ¾-by-9 ¾-by-2-inch baking dish. Spread beef
mixture evenly over pasta mixture. Top with corn. Sprinkle with Parmesan
and mozzarella cheese. Bake at 325 degrees for 35 minutes, or until
thoroughly heated. Makes 6 to 8 servings.
Rotisserie ChickenBiscuit

Ingredients:
1 whole rotisserie chicken
8 refrigerated biscuits
1 can (10 ¾-oz.) cream of
mushroom soup
½ cup milk
Directions:
Heat oven to 450 degrees. Remove meat from rotisserie chicken and shred;
set aside. Discard bones. Cut biscuits into quarters; set aside. In saucepan,
stir soup, milk, sour cream, chicken, vegetables, basil and pepper. Cook
until boiling. Spoon chicken mixture into baking dish. Arrange quartered
biscuits over filling. Bake 10-12 minutes, or until biscuits are golden brown.

Stovetop Mac & Cheese

Cook Time: 13 minutes
Ingredients:
1 box Dreamfields elbows
2 cups shredded reduced-fat
cheddar cheese or part-skim
mozzarella cheese or a
combination
1 cup prepared light Alfredo sauce
½ cup skim milk
Directions:
Cook pasta according to package directions. Drain and return to pan;
remove from heat. Immediately add Alfredo sauce, cheese and milk to
pasta; stir constantly until cheese is melted. Add additional milk if
necessary for desired consistency. Serve immediately.
*Stir-ins: Cooked chicken, turkey, ham cubes, hot dog pieces, meatballs,
cooked chicken or turkey sausage, cooked broccoli florets, green peas,
chopped tomato or halved cherry tomatoes. Makes 6 servings.
Cheesy Baked
Mushroom Chicken

Ingredients:
Nonstick cooking spray
4 boneless, skinless chicken
breasts
½ cup flour
4 tablespoons butter, divided
8 oz. mushrooms, sliced
½ cup chicken broth
¼ teaspoon salt
¼ teaspoon pepper
2 cups shredded mozzarella cheese
½ cup Parmesan cheese, grated
¼ cup green onions, sliced
Directions:
Heat oven to 375 degrees. Prepare 11-by-7-inch baking dish with nonstick
cooking spray. Cut each chicken breast in half. Place flour in resealable bag.
Place chicken in resealable bag with flour; toss to coat. In large skillet,
melt 2 tablespoons butter. Add chicken to skillet; brown all sides. Transfer
chicken from skillet to baking dish. In skillet, sauté sliced mushrooms in
remaining butter until softened. Add chicken broth, salt and pepper.
Bring to boil then cook 5 minutes. Spoon over chicken. Bake 15 minutes.
Sprinkle with cheeses and green onions. Bake 5 minutes, or until
cheese is melted.
