Smothered Pork Chops
in Mushroom Sauce

Ingredients:
1 teaspoon mild chili powder
1 teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon pepper
4 pork chops

Ingredients:
1 cup ketchup
¼ cup vinegar
½ cup brown sugar
1 teaspoon garlic
1 tablespoon minced onion
1 pound of pulled chicken or pork
prepared grits
1 cup shredded cheese

Ingredients:
2 tablespoons cornstarch
1 tablespoon cold water
¼ cup lemon juice
½ cup raisins
1 cup brown sugar
3 cups water

Directions:
In a saucepan stir together ketchup, vinegar,
brown sugar, garlic and onion. Heat on low
for 10 minutes until all sugar is dissolved and
mixture is heated through. Heat pulled chicken
or pork. Prepare grits. To assemble, layer grits,
meat and sauce. Top with shredded cheese.
This makes a great one dish meal.
Variation: Substitute mashed potatoes for grits.
Virginia farmers across the state grow
all the ingredients for this dish.
2 tablespoons olive oil
2 tablespoons butter
Directions:
In small bowl, whisk chili powder, garlic powder,
salt and pepper until combined. Pat pork chops dry.
Season generously with spice mix. Set aside.
In skillet, add olive oil and butter. Add pork chops;
sear 3-5 minutes per side. Transfer to plate. To make
mushroom sauce: In same skillet, add mushrooms.
Stir fry until golden brown. Add garlic, parsley
and Italian seasoning. Stir fry 2 minutes. Add broth
and heavy cream. Stir to combine. Simmer 5 minutes
until slightly thickened. Return pork chops to sauce.
Simmer 2-3 minutes until pork chops are cooked
through. Garnish with fresh parsley and serve.
Directions:
Combine the cornstarch, cold water and
lemon juice. Set aside. Cook raisins, brown
sugar and water until raisins are puffy and
soft (about 20 minutes). Add cornstarch
mixture to the raisin mixture. Cook until
clear, approximately three minutes. Pour
over sliced ham. Makes 3 cups.
