Cookie Swap
A few fun cookie recipes to exchange with friends or leave for Santa
Chocolate Exquisite Cookies

Ingredients:
1 cup butter
1 cup sugar
1 cup light brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 ½ cups oatmeal, blended (measure first,
and then blend into fine powder)
Directions:
In a mixing bowl, cream butter and both sugars together. Add eggs and vanilla. Beat until smooth.
In a separate bowl, mix flour, oatmeal, salt, baking powder and baking soda together. Gradually
add dry ingredients to cream mixture. Add chocolate chips, grated Hershey bar and pecans.
Drop from a 1-inch ice cream scoop onto parchment-lined cookie sheet. Bake at 375 degrees
for 9 to 11 minutes or until lightly browned.
Forgotten Cookies

Ingredients:
2 egg whites
¾ cup sugar
¼ teaspoon salt
Directions:
¼ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 oz. chocolate chips
9 oz. of Hershey bar, grated
1 ½ cups pecans, chopped
Crisp Walnut Cookies

Ingredients:
1 pkg. yellow cake mix
2 cups quick-cooking oats
½ cup sugar
1 cup regular oil
3 eggs
1 ½ teaspoons vanilla extract
1 cup walnuts, finely chopped
Directions:
In a mixing bowl, combine the cake mix, oats and
flflflflfl. Beat in oil, eggs and vanilla. Stir in walnuts.
Drop rounded teaspoons 2 inches apart onto
ungreased baking sheets. Bake at 350 degrees
for 12-14 minutes or until lightly browned. Place
on wire racks to cool. Yields 6 dozen.
1 teaspoon vanilla
11 oz. chocolate baking chips (butterscotch,
lemon, or your favorite may be used)
Preheat oven to 375 degrees. Beat egg whites with salt and vanilla until stiff. Add sugar, one
tablespoon at a time, continuing to beat. Fold in chips. Drop on parchment-lined cookie sheet,
about a teaspoon to a cookie. They do not spread much so it can be placed closely together
flurn oven off, put cookies in and close the door. Don't peek until morning! (Do not double recipe,
the texture will suffer
