State Fair Sept. 23 - Oct. 2
Old favorites, new offerings are highlights of 2016 State Fair.
Fan favorites like the racing pigs
and the demolition derby will return
to the State Fair of Virginia,
but there are plenty of new attractions
as well.
Virginia agriculture, fun foods
and family favorites will take top
billing at the fair, which runs Sept.
23 through Oct. 2 at the Meadow
Event Park in Caroline County.
The latest entertainment includes
a bacon-eating contest, during
which up to 10 amateur eaters
will have five minutes to see who
can consume a half-pound of cooked
bacon the quickest. The winner will receive
a year's supply of bacon from Smithfield
Foods. Also new this year is the
Virginia State Auctioneering Contest,
which will be held on Sept. 29. In addition,
visitors can see the world's largest
horseshoe, certified by the Guinness Book
of World Records and modeled after the
racing shoe of Triple Crown champion
Secretariat.
Musical performances will include those
of the Little River Band on Sept. 23, country
singer-songwriter Granger Smith, featuring
Earl Dibbles Jr. on Sept. 25, and
Richmond-area favorite Jackson Ward on
Oct. 1.

Easy Mexican Corn Side Dish
Jeri Eroh, Powhatan, Virginia
Ingredients:
8 boiled or
grilled ears of corn
7 T low-fat or
regular mayonnaise
½ cup Parmesan cheese
½ t chili powder
Salt & pepper to taste
Lime juice & wedges
to taste
Directions: Scrape kernels from corn cobs by inverting a small
bowl in the center of a larger bowl. Hold each cob against the
upturned smaller bowl and use a sharp knife to cut the corn,
rotating as necessary as the corn falls off into the larger bowl. Add
remaining ingredients, seasoning with salt, pepper and lime juice.
Mix well and serve with additional lime wedges.

This year's fair will feature a tractor pull,
two nights of demolition derby and two
nights of professional rodeo. There also
will be mutton bustin', sheep dog trials
and the crowd-pleasing giant pumpkin
and watermelon weigh-in.
Favorite fair foods like corn dogs, deepfried
Oreos and funnel cakes will return as
well. New fair cuisine includes chocolatedipped
corn on the cob, a bacon pretzel

bread crumbs
15-oz. can yellow corn,
drained
11-oz. can white shoepeg
corn, drained
14.5-oz. can tomatoes with
basil & oregano, drained
1 cup shredded mozzarella
cheese
1 cup grated Asiago cheese
½ cup chopped red onion
½ cup sour cream
1 t each dried basil,
oregano & salt
1 cup crushed
saltine crackers
½ cup butter, melted

Directions: Preheat oven to 375 degrees and grease a 9 " x13 "
baking dish. Sprinkle bottom with ¼ cup breadcrumbs. Combine
remaining bread crumbs with vegetables, cheeses, onion, sour cream
and seasonings in a large bowl. Spoon into baking dish and top with
crushed crackers. Drizzle butter evenly over and bake for 30 minutes.
