Broiled kokanee
Kokanee salmon is an ideal candidate for
broiling because it often is a bit too large for
a frying pan. Laying that fillet on a broiling
pan is a perfect solution, and since the fillets
are thin you don't need to turn or disturb the
fish while it cooks.
Here are some tips when broiling fish:
* Use a broiling pan, not a baking sheet.
You can use a baking sheet, but the
extreme heat of the broiler often causes
baking sheets to warp. I've also seen this
break fish fillets in two.
* Use the bottom piece of the broiling pan,
the one under the wavy, grill-top with
the holes in it. Line the pan with foil for
easier cleanup.
* Set the oven rack at the top. Normally
this is about 4 to 6 inches from the element.
If it is less, move the rack down.
* Preheat the broiler for at least 5 minutes
and as many as 10.

Ingredients
Salt and black pepper
1 or 2 large kokanee filets (trout also works)
1 tablespoon vegetable oil
2 to 4 tablespoons unsalted butter
Optional garnishes
¼ cup lovage or parsley leaves
½ pound preserved or sautéed mushrooms of any kind
1 tablespoon pickled mustard seeds
2 tablespoons berries preserved in syrup (I use rowan berries)
2 pickled angelic stalks, sliced thin

Preparation
Prep time: 20 minutes
Cook time: 5 minutes
Serves 4 people
1. Salt the fish well and set out on a
cutting board to warm up a bit.
Preheat the broiler. If it has a setting,
set it to high.
2. Pat the fish dry with paper towels,
then oil it up with vegetable oil.
Oil down the broiler pan. Set fillets
skin-side down on the pan and dot
the fish with bits of butter.
3. Broil fish for about 4 minutes.
Rotate fish if you see hotspots
under the broiler. When the fish
flakes remove from the oven. Use
two spatulas and carefully lift the
fish to a platter.
4. Grind some black pepper over it
and garnish as you wish.
